Every once in awhile I get inspired to fix myself a tasty little lunch, as opposed to going out somewhere or settling for a homemade turkey sandwich. Today as you may have guessed, was one of those days.
Listen to what I had. Hickory smoked peppercorn bacon fried in a pan until crispy and then diced up. Then I took some shredded chicken and threw it in the pan with the bacon grease to heat it up and infusion some more flavor into it. Threw all of that into a corn tortilla and topped with onions, tomatoes, avocado, and cilantro. Simple and scrumptious.
Sam the Cooking Guy would be so proud.
